Tabbouleh is a Middle Eastern salad served as an appetizer, but this Ayurvedic twist on it makes it the main event. Made with an abundance of fresh kale, herbs, radish, and carrots, a tabbouleh like no other! Served with TWO sauces, (a creamy carrot tahini sauce & green tahini sauce), black lentils, and fresh herbed spelt crackers (my moms favorite).

Combined with the roasted carrots, sautéed spinach, toasted pumpkin seeds and topped with a coco cilantro chutney, this meal is delightful!
