Coconut Date Cream Pie

The cooling and hydrating properties of the coconut make this pie balancing and revitalizing for those hot summer days. It’s my go to for any summer celebration, and a way to really WOW your guest. 

Cucumber Coconut Mint Chutney

This sauce was inspired by the shifting of spring into the hot summer heat of California. In Ayurveda, when the weather gets hot we don’t necessarily eat cold foods or drink cold drinks to cool down. But we will consume things that will have a cooling effect internally; like cucumber, mint, cilantro, coconut; which are all in this sauce. 

Grilled Berries With Coconut Cream

Part of the glory and bounty of summer is all fruits in season! It seems all of nature is brimming with sweetness and juicy fruits. Mama nature always provides us what we need, as fruit is cooling and hydrating, providing us with just the right medicine for those hot summer days. 

Healing Kitchari

Kitchari is a foundational meal of Ayurveda. Composed of basmati rice and mung dal and spices, it has as many variations as there are cooks who prepare it. It can be used in sickness and in health, and because it is so nourishing and healing, it can be eaten for breakfast, lunch, or dinner. It has many qualities but being quick and makes it a savior when you don’t have a lot of time to cook.

I worked at Cafe Gratitude for years, and I loved all of their bowls. This bowl is an Ayurvedic take on their Grateful bowl, as it incorporates the six tastes, is fully cooked, and has the 60/40 ratio of building and cleansing foods.
